Method
Check that your avocados are ripe by pressing gently near the stem; they should give slightly, like a ripe peach, but not feel mushy.
Cut each avocado in half lengthwise around the pit, twist the halves apart, then carefully tap a knife into the pit, twist, and lift it out.
Scoop the avocado flesh into a medium bowl with a spoon, then immediately pour the lime juice over it to keep it bright green.
Mash the avocado with a fork to your liking, leaving it chunky for texture or smoothing it more for a creamier dip.
Add the chopped onion, diced tomato, minced jalapeno, cilantro, grated garlic, and salt to the bowl.
Fold everything together gently with the fork until just combined, being careful not to overmix into a paste.
Taste with a chip and add more salt or lime a little at a time until it tastes fresh and zingy.
Let the guacamole rest for 5 minutes so the flavors mingle, then give it one last gentle stir.
