Method

  1. Heat the oil in a large pot or deep skillet over medium heat. Add the cumin seeds and let them sizzle for about 15 seconds until fragrant and lightly darkened; this blooming step releases their aroma into the oil.

  2. Add the chopped onions and cook for 8 to 10 minutes, stirring often, until deep golden brown. Taking the onions this far is key -- their sweetness and color form the foundation of the whole curry, so do not stop at pale.

  3. Add the ginger-garlic paste and cook for 1 minute until the raw smell disappears, stirring constantly so it does not catch.

  4. Add the coriander, ground cumin, turmeric, and chili powder and stir for 30 seconds to toast the ground spices briefly in the oil.

  5. Pour in the pureed tomatoes and add 1/2 tsp of the salt. Cook for 8 to 10 minutes, stirring occasionally, until the mixture thickens into a glossy paste and you see oil beginning to separate at the edges, which signals the base is fully cooked.

  6. Add the drained chickpeas and stir to coat them thoroughly in the spiced base.

  7. Pour in the water and the remaining salt, then bring to a gentle simmer. For a thicker gravy, mash a few tablespoons of the chickpeas against the side of the pot with a spoon.

  8. Lower the heat to medium-low and simmer, partly covered, for 12 to 15 minutes so the chickpeas soak up the flavors and the sauce thickens to your liking.

  9. Stir in the garam masala and amchur and simmer for 2 more minutes. Taste and adjust salt, and add a splash of water if the curry is too thick.

  10. Turn off the heat and garnish with chopped cilantro and the ginger matchsticks. Serve hot with rice, naan, or bhatura.

Chef's tips

  • For deeper color and flavor, add a black tea bag while simmering the chickpeas, then remove it before serving -- a common trick for restaurant-style chana.
  • Amchur gives the authentic tangy finish; if you cannot find it, lemon juice stirred in at the very end works well.
  • This curry tastes even better the next day once the flavors have had time to meld.
